Baby led weaning - Savoury Muffins

These breakfast muffins are perfect for anyone who’s in a rush and needs a quick healthy or needs a easy baby led weaning recipe. These can be freezer making them super easy and convenient!

These should make around 6-12 mini savoury muffins.

 

You will need

12 eggs - you may need more depending on how big you what the batch to be

1 cup spinach

1 cup cherry tomatoes

300grams smoked ham

1 cup of shredded cheese

Italian herbs

Our ice cube tray - see on our website 

 

Directions - pre heat oven to  180 degrees c

Step 1. Dice cherry tomatoes, and finely chop the ham and spinach.

Step 2. Whisk eggs in a separate bowl and sprinkle utilise herbs in.

Step 3. Grab your ice cube trays and slightly spray olive oil over them (this step can be skipped) as silicone doesn’t stick.

Step 4. Add ham in each cube, followed by tomato, spinach and cheese.

Step 5. Pour the egg mixture in each ice cube over the filling.

Step 6. I like to top my muffins with thinly sliced tomato and some extra cheese

Step 7. Put the ice cube trays in the oven for 25-30 min on 180degrees c.

Step 8. They should rise, keep checking as they may cook faster or slower depending on your oven.

Step 9. Once cooked, allow to cool then pop out each muffin!

Step 10. Enjoy!!!

 

Freeze the leftovers or store in the fridge in our airtight bowls / plates for a few days.
