Let's make my healthy veggie loaded beef or pork sausage rolls. If your toddler hates veggies you can hide them in the mix. Try this recipe!

Ingredients

Handful of fresh herbs (parsley, basil, thyme, rosemary)

1 Egg

2 stalks celery

1 Carrot

1 Zucchini 

Mixed Italian herbs

1 onion and 2 pieces of garlic 

500g - 1kg Lean Beef or pork mince (depending on how many you want to make)

Note:  I made 1kg and it made approximately 15 mini sausage rolls.

Puff Pastry - (around 4-5 sheets for 1kg) or for a healthy alternative use rice wraps! ( around 4-5) These wraps are found in the wrap section in the supermarket - Mountain bread rice, mountain bread 200g

 Directions - Pre heat oven to 180 Degrees

1. Grate carrot and zucchini 

2. Finally chop herbs and veggies to hide in mixture

3. Dice onion and mince garlic

4. Combine beef mince, vegetables and garlic

5. Beat egg and mix with all ingredients 

6. Add salt, pepper and herbs

7. Stir mixture to combine

8. Defrost pastry and using a spoon add a line of mixture down the sheet then roll pastry to make a sausage roll.  Overlap pastry about 1 inch and brush the edge with milk or egg to seal.  I like to add an extra egg to ensure it sticks together.

Tip: Brush egg on top of the roll before cooking

9. Lay sausage rolls on baking paper on oven tray

10. Cook for approximately 30-40mins on 180 degrees

11. Turn over sausage rolls when half cooked

12. Enjoy!

You can freeze leftovers and re heat in the air fryer to crisp the pastry approximately 5 minutes
